Mmm, No Wheat!

It's just been a little over a week, but I have a couple easy Gluten-Free friendly recipes to share for anyone interested.  Has definitely made the adjustment less painful.  By the way, in the spirit of being completely transparent, I have not become 100% GF yet.  Hey, sometimes when there are no options, a girl's just gotta eat.



Brown Butter & Pesto Gnocchi (adapted from Martha Stewart)

Ingredients:
1 package of gnocchi (make sure it does not contain wheat)
1 large egg yolk
1 teaspoon of lemon zest
3 teaspoons of EVOO (extra virgin olive-oil)
1 teaspoon of salt
3 tablespoons of unsalted butter
Pinch of freshly ground pepper
1/4 cup of pesto
1/4 cup of freshly grated parmesan

Steps: 
Cook gnocchi as directed.
In a bowl, combine egg yolk, lemon zest, olive oil, and salt.
Place a large saute pan over medium-high heat.  Add butter.  When butter begins to brown add pepper and salt.
Add the gnocchi and pesto.  Cook, stirring occasionally.
Serve immediately, with dusting of Parmesan cheese.








Chocolate Chip Cookies (adapted from Trader Joe's recipe)

Ingredients:
2 1/4 cup of Gluten-Free flour
1 teaspoon of salt
1 teaspoon of baking soda
1 cup of brown sugar
1/2 cup of sugar
1 cup of butter
1 teaspoon of vanilla
2 eggs
1 package of chocolate chips

Steps:
Preheat oven to 375-degrees.
Combine GF-flour, salt and baking soda in a bowl and set aside.
Combine butter, sugars and vanilla until creamy. (Definitely can be hand mixed-I did!)
Add eggs.
Add dry ingredients.
Stir in chocolate chips.
Enjoy!
